Tips & Suggestions All of our products are homemade, fat and cholesterol-free gourmet pickles, and sauces that are delicious just as they are. Many of our customers have been known to consume them straight from the jar with a spoon or a fork! lt is helpful however, when products can also be used in different ways in order to enhance favourite appetizers, baked goods, main dishes, and desserts. Here are some of our suggestions for serving. We are sure that you will also find other great uses for our products; please let us know so we can pass them along. All Pickles, Preserves, & Relishes: All of our savoury preserves can be excellent accompaniments to any pickle tray or antipasto platter, and serve as delightful condiments to almost every main meal. Most are best served chilled, especially our Garlic Dills. Maritime Mustard Pickles: One of our most popular products, because it is an excellent pairing for beef, pork, and chicken. Try using it to replace high-fat dressings, and plain mustards in deli sandwiches, and as standardand barbeque fare on hamburgers, sausages, and hotdogs. Bread & Butter Pickles: Great as an old favourite, but try using the juice to pump up the flavour of your favourite potato salad. Chow Chow: This can also be used as a green relish for burgers and franks; after all, they put it on everything in Quebec so that is why they call it "Green Ketchup"! Pickled Jalapeno Peppers/Pickled Hot Hungarian Peppers/Pickled Super Chillies: These can all be used to spice up meals, but try adding them to soups, stews, sauces, pasta dishes, and casseroles, depending on how much more "zing" you enjoy. Pizza/Pasta Sauce: Delicious as a seasoned pasta sauce, or add your choice of favourite vegetables and meat to customize your pasta dishes. lt is an excellent fat-free spread for pizza dough, bagels, pitas, and bread as a base for a homemade pizza. lt is also a pleasing sauce for Veal, Chicken, or Vegetable Parmaigiana both as a meal or on a bun. lndonesian Satay sauce: This is fabulous as a sauce for kabobs or satays, but just as delicious served as a dip for raw vegetables. All Savoury Jellies: These jellies (Orange & Red Pepper Jelly, Green Jalapeno Pepper Jelly, Fresh Basil Jelly, Fresh Garlic Jelly, Herbed White Wine Jelly, and Zesty Watermelon Jelly) as well as our Lime Jelly and Wild Blueberry Wine Jelly can really enhance many of your favourite dishes. Use as a glaze for various meats during the last minutes of roasting, grilling, or barbequing. Add several tablespoons to soups, stews, and sauces, stir frys, casseroles and pasta dishes before serving, to accent the various flavours of herbs and vegetables in the jellies. They can also be used for many hot or cold appetizers. Try a spoonful on crackers with cream cheese. Experiment mixing the various flavours with different juices, wines, and liqueurs, thickened with cornstarch, as a dipping sauce for chicken fingers, Spring rolls, and crudities. "Flavoured Cheesecake" With a knife, swirl one-half cup of your favourite jams or conserves through the batter of a cheesecake before baking. lf garnishing with fresh fruit or berries, melt jelly and use as a shiny glaze. "Cheesecake Surprise Muffins" Fill muffin tins with one third of the batter, a few tablespoons of jam or conserve, a few teaspoons of sweetened cream cheese, and the remaining batter, and bake as usual. Before serving, dust with cinnamon sugar, icing sugar, or cocoa. "Baked Brie with Nuts" All of our delicious jams, jellies, conserves, as well as our "Cranberry Relish" can be spread on top of brie. Toast, and chop almonds, walnuts, pecans, hazelnuts, or pistachios. Bake brie in a pre-heated medium oven (325F) for 5-7 minutes, or until beginning to soften. Top with nuts, and serve immediately with toasted bread, a variety of crackers, and apple, or pear slices.
